1. Some of your recipes use seasonal fruits. Do you have any techniques or tips to freeze or store those fruits so we could use them all year round?

The fruit freezing process is very thorny. Some fruits are almost impossible to freeze without any damages when the defrost process starts (raspberries, strawberries…).

Here is some advice that may help you solve this problem out:

- Apples: carefully stored in a ground cellar, apples can be stored 8 to 10 months without any problems. Losses don't exceed 2% of the total stock. Buy several tons of apples every year at the cheapest moment in the year. Store them in wooden crates. The most beautiful apples should be used for tartlets while the least ones should be turned into applesauce for apple turnovers.

- Pears: same system as for apples.

- Lemon: for tartlets with lemon, you need juice and zest. December is usually the cheapest period to buy lemon in bulk for the whole year. Turn the whole stock into juice straight away. Juice associated with zest can be frozen without any problems and stored in simple plastic jars or bottles for more than a year.

- Apricots: this fruit is hard to freeze but in winter, it can be replaced with dried apricots. Soak them in water for several hours before using them to make oranais. If your margins enable you to do so, another way to solve this problem out is to resort to canned apricots.

- Dried raisins: the yearly stock can be bought at once. Dried raisins can be easily stored in linen bags for more than a year in a dry place.

- Raspberries and strawberries: those fruits are very difficult to freeze successfully. Canned strawberries can be found but they are tasteless. That's why we recommend keeping this product for the summer-autumn season only. In winter, focus your production on other types of tartlets (such as tartlets with chocolate, lemon, apples…).

2. If I decide to import some raw materials from Europe, can you take care of the delivery while offering competitive prices?

If raw materials are loaded in the same container as your equipments, LS will not charge you for the raw materials' transport till your bakery. Of course, this offer remains valid as long as there is some room left in the container.
